Sour Spelt Loaf Part I

I received a request from a Breadsly fan to invent a hearty loaf of bread using as little white flour as possible. This is the result:

Measure 100g bread flour:

Followed by 50g water:

A tiny bit of active-dry yeast:

Then add 10g of acidophilus sauce:

Put all that together:

And mix it until a dough forms:

Cover the container and let it sit overnight somewhere warm.
