Chewy Pita Day One

This pita recipe is incredibly simple to make if you have some time to let the yeast do the work. The tasty mix of flours is a winning favorite at our house. We'll use a simple overnight no-knead dough with little yeast.

First, measure 200g bread flour:

Then, 200g sprouted whole wheat flour:

200g sprouted whole wheat flour

And 100g Einkorn flour:

100g einkorn flour

Mix them together in a container:

Then measure 325g water at room temperature:

325g water

Add a pinch of active dry yeast:

Then 8g of salt:

8g of salt

Stir it well to dissolve, then add it to the flour mix:

Mix that until a dough forms:

Cover the container and let the dough sit overnight at room temperature.
