Puffy Loaf

This amazing bread recipe requires no kneading and very, very little yeast. It takes some waiting for the magic to happen, but it's well worth the wait.

We measure 200g of Typo 00 flour:

200g of typo 00 flour

Place it in the mixing bowl. Then measure an equal amount of room temperature water:

200g of water

Add a very small amount of active dry yeast. I could probably count how many these are:

Tiny bit yeast

Let it dissolve in the water, then stir it to get this:

Yeasty water

Add it to the flour:

Mixture

Mix it together until all the lumps are gone:

Starter

Cover, and let it sit at room temperature overnight.
