Pita Half One

This is the best pita bread recipe you will ever find on the Internet, period. There are no secrets, really. It is a very simple bread. Puffed bread. So we should avoid saying "pita" when it's a flatbread. I also love flatbreads. Here's the best recipe that'll help you make puffy pitas:

I start out with measuring 100g of Tipo 00 flour:

100g Tipo 00 Flour

I place it in the mixing bowl and measure an equal amount of water at room temperature:

100g Water

Then, I add a tiny bit of active dry yeast to the water like so:

Let it sit for five minutes and stir it a little:

Yeasty water

Add it to the flour:

Then stir it together until a paste forms:


Cover it tightly and let it sit overnight at room temperature.

Crumbs: While baking, cover the dough to obtain a crust.
